They are fluffy, tossed in butter, and the perfect dish to delight both children and adults – whether served as a sweet main course or a delicious dessert. Your poppy seed noodles recipe (serves 4 hungry people) · Prep time: ~25 min · Cook time: ~10 min · Level: easy
Ingredients
600 g floury potatoes
120 g potato starch
1 organic egg + 1 egg yolk
70 g butter
20 g Powidl (plum butter)
50 g powdered sugar
150 g finely ground poppy seeds (Waldviertler “Graumohn” if available)
1 pinch cardamom
Method
Prep the potatoes:
Boil unpeeled in salted water until tender. Peel, then let steam-dry in the oven at 80 °C – this keeps the dough light.Make the dough:
Press hot potatoes, add egg, yolk and potato starch. Quickly bring together into a smooth dough (don’t over-knead).Shape noodles:
Roll into ropes, cut small pieces and shape Schupfnudeln – perfect for little helping hands.Cook:
Simmer the noodles in gently boiling salted water for ~10 minutes.Poppy magic:
Mix powdered sugar, poppy seeds and cardamom – aromatic crunch incoming.Butter & Powidl:
Melt butter with Powidl, toss the noodles in it.Serve & enjoy:
Dust with the poppy-sugar mix. Optional: add stewed plums. Voilà – pure family joy!

Can you prep/freeze Mohnnudeln?
• Dough: up to 1 day chilled. • Shaped raw noodles: 8–12 h chilled, then cook fresh. • Cooked noodles: up to 2 days chilled, reheat in butter, coat with fresh poppy sugar.
• Freeze: Best cooked: cool, lightly oil, pre-freeze, then pack (up to 3 months). Thaw overnight or reheat straight in butter. Always add fresh poppy sugar at the end.What goes well with them? Powidl or applesauce; vanilla sauce; stewed plums/berries; lemon zest; buttered breadcrumbs.
